Early last year, I was in a similar position, I had way too much paperwork that I had let stock pile, finally I spent a couple of days going through, organizing and <a href="http://www.fellowes.com/Fellowes/site/products/ProductsCategory.aspx?Name=SHREDDERS" rel="nofollow">shredding</a>. Now I shred at least once or twice every two weeks. I do not allow them to stock pile. In terms of organizing on my iPhone, I use Omnifocus, which you can also sync to your computer, it's not cheap but is a good approach to GTD ("Getting Things Done"), which is a book I would recommend if you haven't already read it.
